Scalloped Tomatoes

Ingredients:

  • 2 Tbsp. onion
  • 3 cups tomatoes
  • 1 Tbsp. sugar
  • dash paprika
  • 1 cup grated Cheddar cheese
  • 1 cup bread crumbs
  • 4 Tbsp. butter, melted
  • 2 Tbsp. butter
  • 5 Tbsp. Minute Tapioca
  • 1/2 tsp. salt

Directions:

Mix bread crumbs and melted butter. Pat into a greased 9x13 inch pan. Melt butter in pan; add onions and lightly brown. Add tomatoes, sugar, tapioca, salt, and paprika and cook 5 minutes. Stir so tapioca does not stick. Put mixture on top of crumbs. Sprinkle grated cheese on top. Bake at 350 degrees F for 35-40 minutes.
