Macaroni Fruit Salad

Love the fruit in this, especially the pineapple.

Ingredients:

  • 1 (8 oz.) box tiny macaroni, cooked and drained
  • 2 cans crushed pineapple, drained (reg. size)
  • Ad
  • 1 can fruit cocktail, drained (reg. size)
  • 2 beaten eggs
  • 1 cup sugar
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 2 cups pineapple juice (juice drained from the pineapple and fruit cocktail cans plus enough water to make 2 cups)
  • 1 pint whipping cream

Directions:

Cook and drain macaroni. Mix eggs, sugar, flour, salt and juice. Cook until thick. Pour over the well drained macaroni, and mix gently. Refrigerate overnight.

The next morning, add drained crushed pineapple and fruit cocktail. Whip the whipping cream. Fold in 2 cups of small marshmallows and the whipped cream. Chill.
