Make Your Own Almond Milk

To make almond milk, you need only about a cup of raw almonds. Make sure not to buy or use roasted almonds. You soak these overnight in pure water, drain, and put in a blender along with 3 cups of pure filtered or spring water and blend about 2 1/2 minutes. Then pour into a nut milk bag, sprout bag, or fine mesh strainer. Squeeze tightly if you're using a bag. Pour into a glass jar, add whatever sweetener you like and refrigerate. This will keep 5 days or so. Use it wherever you would use other milk.

I wondered how almond milk was made, thank you. Just out of curiosity, why do you discard the water you soak the almonds in, instead of just using it when you blend the almonds after soaking? Does it change the flavor or make it bitter or something? Thanks!
