Three Bean Salad

Ingredients:

  • 1 pint green beans, cooked
  • 1 pint yellow wax beans, cooked
  • 1 pint kidney beans, cooked and rinsed
  • 1 purple onion, sliced thin
  • 1/2 cup celery, diced
  • 1/2 cup red or green pepper, diced

Dressing:

  • 3/4 cup sugar
  • 2/3 cup vinegar
  • 1/3 cup salad oil
  • 1 tsp. salt

  • 1/4 tsp. pepper

Directions:

Drain all the beans well and mix together. Then stir in the onion, celery and pepper. Stir in dressing. Let stand several hours or overnight to allow the flavors to blend.

For dressing, blend together thoroughly then pour over vegetables.

Ingredients

  • 1 can cut green beans
  • 1 can cut wax beans
  • 1 can kidney beans
  • 1/2 cup cut up green pepper
  • 1/2 cup cut up green onion
  • 1 small jar pimento, drained
Salad dressing:
  • 1/2 cup salad oil
  • 1/2 cup cider vinegar
  • 3/4 cup sugar
  • 1 tsp. pepper

Directions

Drain beans (rinse kidney beans). Put all into glass bowl. Mix dressing ingredients and pour over. Mix thoroughly and let stand overnight in refrigerator.
