Frosted Cinnamon Zucchini Bars

These bars are wonderful and are a great way to use zucchini from your garden.

Bar Ingredients:

  • 3/4 cup butter or margarine, softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 cups flour
  • 1 1/2 tsp. baking powder
  • 2 cups shredded zucchini
  • 1 cup coconut

  • 3/4 cup chopped nuts, opt.

Directions:

Cream butter and sugars. Add eggs, beating well. Add vanilla and zucchini. Stir, then add the rest of the ingredients. Spread in a greased 15x10 inch pan. Bake at 350 degrees F for 25-30 minutes or until toothpick near the center comes out clean. Cool completely.

Frosting Ingredients:

  • 2 cups powdered sugar
  • 1 tsp. cinnamon
  • 2 Tbsp. butter, melted
  • 1 tsp. vanilla
  • 2-3 Tbsp. milk

Directions:

Stir all together and spread over cooled bars. Garnish with chopped nuts.
