One-Dish Meal

Love this because it is a nice, hearty yet inexpensive meal. Easy to make, too.


  • 2 medium raw potatoes, sliced
  • 2 raw carrots, sliced
  • 1 small onion, sliced
  • 2 Tbsp. rice (raw, not Minute Rice)
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 lb. ground beef, browned and drained
  • 1 1/2 cups tomato juice


Place potatoes in a greased casserole dish. Add carrots, onion and rice. Add salt and pepper. Place browned and drained meat on top and cover with tomato juice. Bake at 350 degrees F for 1 1/2 hours, or until tender.

Prep Time: 15 Minutes
Cooking Time: 90 Minutes
