Potato Cakes

A different, very tasty way to serve potatoes.

Ingredients:

  • 5 medium potatoes
  • 4 oz. feta cheese, crumbled
  • 1 bunch green onions, chopped, green and white parts
  • Advertisement

  • 3 Tbsp fresh dill weed, chopped
  • 1 egg, beaten
  • 1 Tbsp lemon juice
  • flour for dredging
  • 3 Tbsp olive oil

Directions:

Boil potatoes in their skins until done. Peel while still warm, then mash. Stir in the feta, onions, dill, egg, and lemon juice, and salt and pepper to taste. Cover and chill.

Divide into small balls, flatten slightly, and dredge in the flour. Heat the oil and fry until golden brown on both sides.

Good when served with sour cream.

This recipe sounds so good. We really enjoy good potato cakes; the Jewish Latkes have always been a favorite.

I've never made potato cakes using Feta Cheese, so this is going to be a nice new treat for us. I almost always have Feta in the Cheese drawer of the fridge, but I'll have to buy fresh dill and the green onions this time.

I have an idea that we'll be making these a lot. Thank you Barb. Definitely a winning recipe.

These sound great. I've not made these with Feta cheese either but I love it.
This is a must try and will. Two thumbs up and thanks for posting.
