Cucumber Jelly

A nice and colorful condiment.

Ingredients:

  • 2 1/2 cups cucumber juice (cut up about 6 to 7 cukes and strain off juice)
  • 1 cup vinegar
  • Advertisement

  • 6 cups sugar
  • 1 bottle Certo

Directions:

Boil juice, sugar, and vinegar for 2 minutes. Add certo and bring to a boil again. Remove from heat. Add enough green food coloring to give it a nice color. Makes 6 to 8 jars.

This sound interesting. What does it taste like? Possible like pepper jelly? Do you use it like pepper jelly or on toast, bagels, etc?

I made it last year and served with cream cheese on Ritz crackers. My family liked it.
