Creamy Tomato Linguini

An easy pasta dish that you can have ready in less than 20 minutes. You can also opt to serve the sauce separately from the linguine so everyone can spoon the sauce amount to their liking.


  • 1 lb. Linguini
  • 1 Tbsp. extra virgin olive oil
  • 2 tsp. minced garlic
  • 1 (14.5 oz) can crushed or diced tomatoes, not drained
  • 1 cup sour cream
  • crushed red pepper to taste
  • salt to taste
  • 3/4 cup fresh grated Parmesan cheese


Cook linguini al dente according to package directions.

Meanwhile, heat the olive oil over medium heat and sauté the garlic in a large skillet until fragrant, about 2 minutes. Add tomatoes and Parmesan and heat thoroughly.

Slowly incorporate the sour cream stirring until heated and add crushed pepper and salt to taste.

Drain linguine but not so thoroughly that it is completely dry, return to pot, stir in sauce and serve.
