If you want tea or coffee to cool down quicker, just place a spoon in the cup holding the hot liquid. The heat will be transferred to the metal spoon.

Make coffee or tea "ice cubes" and add one or two to the hot liquid. That way it won't get all "watered" down. Not sure about freezing hot chocolate into cubes, but it may work.
