"Dump-Stir" Stew (Crockpot)

Bronze Post Medal for All Time! 107 Posts
This is my basic recipe for something I call "dump-stir" stew. The items you dump into the crock pot can be altered depending on what you have available. Frugal cooks aren't wasteful and this stew is an excellent way to use up leftovers you have in the refrigerator.

Ingredients:

  • Approximately 1 1/2 lbs. stew size pieces of beef
  • 1 (1 lb.) bag of baby carrots
  • 1 (15.5 oz.) can light red kidney beans, drained
  • 1 (15 oz.) can white potatoes, drained
  • 1 (15 oz.) can of corn
  • 1 large onion, chopped
  • 3 to 5 garlic cloves, minced
  • 3 cups water
  • red pepper flakes, salt, pepper to taste

Directions:

Simply dump the above ingredients into a slow cooker, stir to mix, and cook on low for about 6 hours. This can be served over rice as a way of increasing the amount of servings you get from the stew. A variety of vegetables can be substituted for the ones mentioned in the recipe.

Servings: approximately 6 servings
Prep Time: 10 Minutes
Cooking Time: 6 Hours
