Hot Chicken or Turkey Salad

Great use of leftover chicken or turkey meat. This is a yummy recipe!

Ingredients:

Casserole:

  • 3 cups diced cooked chicken breasts or cooked turkey meat

  • 1/2 cup slivered almonds
  • 1 jar chopped pimento
  • 1 (8 oz.) can water chestnuts, sliced and drained
  • 1 cup celery, chopped fine
  • 1 cup mayonnaise
  • 2 Tbsp. lemon juice
  • 1 tsp. salt
  • 1/8 tsp. pepper

Topping:

  • French fried onions
  • 3/4 cup shredded cheddar cheese
  • Directions:

    Mix all casserole ingredients together and top with french fried onions and shredded cheddar cheese. Use oblong 9x13 inch pan or Pyrex. You can also top with potato chips. Bake at 350 degrees F for 30 minutes.

    Prep Time: 20 Minutes
    Cooking Time: 30 Minutes
