- 2 Tbsp. margarine
- 1/4 cup chopped onion
- 1/4 cup chopped green pepper
- 1/2 tsp. oregano
- 4 cups zucchini slices
- 1 tomato, cut in wedges
- 1 cup shredded cheddar cheese
Melt margarine in skillet. Add onion, green pepper and oregano and saute until tender. Add zucchini. Cover and cook about 15 minutes over low heat. Stir in tomato. Fold in cheese and stir until melted. Serves 6.
