One Dish Meal


  • 1 lb. ground beef
  • 1 Tbsp. vegetable oil
  • 1 clove garlic
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 tsp. salt
  • 1 tsp. chili powder
  • 1/4 cup sliced olives
  • 1 (16 oz.) can red beans
  • 2 1/2 cup tomatoes with juice, chopped
  • 3/4 cup uncooked rice
  • 3/4 cup grated cheddar cheese


Brown beef on oil with garlic. Add onion and green pepper; cook until onion is transparent. Drain off fat. In 2 quart casserole combine meat mixture, salt, chili powder, beans, tomatoes, and rice. Bake, covered at 350 degrees F for 30 minutes. Uncover, sprinkle with cheese and olives; bake 15 minutes more. Serves 6-8
