- 3 oz. low calorie cream cheese
- 1 tsp. grated orange rind
- 1 tsp. grated lemon rind
- 5 walnut halves, chopped
- 1/4 cup shredded coconut, unsweetened and toasted
- 2 Tbsp. sugar or equivalent of artificial sweetened
Soften cream cheese and whip until light and fluffy. Add all other ingredients except toasted coconut. Mix well and form into 12 balls. Roll each in coconut, place on waxed paper and refrigerate until firm.
