Diabetic Buttermilk Rusks Recipe?

I am looking for a diabetic buttermilk rusk recipe. Can anyone help? I have a friend that is a diabetic and she is desperately looking for diabetic rusks.

Rusks are almost like a biscuit but bigger chunky pieces.... You bake the rusk mix in a sheet pan... Like a sheet cake... Let it cool then cut it up in pieces.... Place on a baking tray again with small space between pieces... Then put in a low oven to dry out over a couple of hours....

Let it cool and then dunk it in hot coffee and eat immediately after dunking. Typically enjoyed for breakfast... Or anytime of say snack.... Famous in South Africa.... Not sure of origin.

Rusks are a hard biscuits or zwieback which can be bought in stores. Don't know if they are low carb or not.

BROWN BUTTERMILK RUSK WITH NUTRINE
4 CUPS OF WHITE FLOUR
4 CUPS OF BROWN / NUTTY WEAT FLOUR
9 WHEATBIX BLOCKS (FINE)
500 GRAM BUTTER OR MARGERINE

50 ML BAKING POWDER
2 EGGS
08 ML BI CARB POWDER
10 ML BROWN VINAGER
10 ML SALT
1.5 TO 2 CUPS OF NUTRINE
500 ML BUTTER MILK

RUB BUTTER IN FLOUR. MIX WITH SALT,WEETBIX, BAKING POWDER. MIX BUTTERMILK,NUTRINE, EGGS,BI CARB. MIX INTO FLOURMIX. PRESS INTO A FLAT GREASED BAKING PAN
AND CUT IN TO PEACES. BAKE AT 180 C FOR 25 MINUTES. LET IT COOL AND BREAK IN TO PEASES DRY IN A COOL OVEN (70 C- 100C)UNTIL DRY. ENJOY
