Vegetable Medley Salad

This salad is the perfect way to eat your daily serving of veggies. You can top it with whatever dressing you would like to change it up a bit.

Ingredients:

  • 1 1/2 cups thinly sliced carrots
  • 1 1/2 cups bite-sized cauliflower florets
  • 1 cup sugar snap peas or pea pods, halved diagonally
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced celery
  • 1/2 cup coarsely chopped green pepper
  • 1/4 cup sliced green onion
  • 1/2 cup bottled honey-dijon or ranch salad dressing
  • 1/4 tsp. pepper
  • 2 Tbsp. sunflower kernels
  • 1/4 cup crisp-cooked drained and crumbled bacon

Directions:

Combine vegetables, dressing, and pepper in a mixing bowl; cover and chill 2-24 hours. Sprinkle with sunflower kernels and bacon. Serves 6-8.
