Lettuce Cake with Lemon Frosting

Ingredients
  • 1 cup lettuce, finely chopped
  • 1 1/2 cups all purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/8 tsp. mace
  • 1/8 tsp. ginger
  • 1 cup sugar
  • 1/2 cup corn oil
  • 1 1/2 tsp. lemon peel, grated
  • 2 eggs
  • 1/2 cup walnuts, chopped

Directions

Sift all dry ingredients except sugar.combine sugar, lemon rind and oil. Mix in flour mixture and chopped lettuce. Add eggs, one at a time, beating well after each one. Stir in walnuts and pour into a 9 inch x 13 inch baking dish. Bake at 350 degrees F for 25-30 minutes, or is golden brown and tests clean.

Frosting:

Ingredients

  • 1 1/2 cups powdered sugar
  • 1/4 tsp. lemon extract
  • 1/2 tsp. grated lemon peel
  • 2-3 Tbsp. milk
  • 1 Tbsp. butter, softened

Directions

Sift powdered sugar and combine with other frosting ingredients. Beat till smooth and put on cooled cake.

I'd think any kind of lettuce would work.

Does it mater if I dont use mace not sure every seen it .

Substitute nutmeg instead. Mace is made from the outer coating of the nutmeg seeds.
