Chili Taco Salad
- 3 cups shredded lettuce
- 3 cups thick chili soup, warmed
- 1 cup refried beans
- 1 cup salsa
- 2 cups shredded cheddar cheese
- sour cream
- tortilla chips
Divide lettuce into 4 soup plates. Heat chili and refried beans in a saucepan, then divide evenly onto lettuce in plates. Add 1/4 cup salsa to each plate. Sprinkle with cheese and spread with sour cream and tortilla chips as desired. This salad is filling enough to be used as a main course meal. It is good with garlic bread on the side.
