Easy Pinto Bean Chili Soup

A cool variation on chili recipes. Like the Mexican flavor. :)


  • 2 Tbsp. chopped onion
  • 2 Tbsp. chopped green bell pepper
  • Ad
  • 3 cloves garlic, chopped
  • 1 tsp. butter or margarine
  • 1 lb. lean ground beef
  • 1 can pinto beans (29oz.)
  • 1 can refried beans (16oz.)
  • 1 can diced tomatoes (15oz.)
  • 1 can peeled tomatoes (15oz.)
  • 1/2 cup mild salsa
  • 1 can tomato paste (6oz.)
  • 1/8 tsp. parsley flakes
  • tabasco sauce, to taste
  • crushed dried chilies, to taste


Saute' onion, green pepper and garlic in butter in large stock pot. Add ground beef, stirring frequently. Add pinto beans, refried beans, diced tomatoes, peeled tomatoes, salsa, tomato paste, parsley flakes, Tabasco sauce and dried chilies, and mix well. Simmer 2 hours, stirring frequently. Serve with tortilla chips or corn bread.
