Recipe: Rice Krispy Bunnies

Decorated Rice Krispy BunniesIf you are looking for a fun and easy to make Easter treat, try making these adorable Rice Krispy bunnies. There are so many ways to decorate them... be creative!

Ingredients:

  • 6 cups Rice Krispies
  • 4 cups mini marshmallows
  • 3 Tbsp. butter
  • bunny cookie cutter
  • 1/2 cup mini marshmallows
  • 1/4 cup chocolate chips
  • 1/4 jellybeans jellybeans (blue, green, pink)
  • candy grass, or licorice strings
  • cookie frosting, piping gel (optional)

Directions:

First prepare the Rice Krispies as follows:

Using a large pan, heat butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add Rice Krispies a cup at a time and stir until well coated.

To make the bunnies:

Lay out a piece of wax paper and scoop your prepared rice krispies onto it. Spray your hands and the cookie cutter with some non-stick spray. Using your hands, gently press the rice krispies into a layer about 1/2 inch thick. Let the rice krispies cool for a few minutes so that they are not quite as sticky.

Then using the cookie cutter, cut out some bunnies. I found that it is easiest to gently pull the excess away from the outside of the cookie cutter, and then gently push the cut shape out of it. Once you have cut out as many shapes as you can from the layer, you can gently press the remaining rice krispies together and again flatten them out with your hand into a 1/2 inch thick layer. Repeat the cutting process until you have used up your rice krispies.

You can either use chocolate chips and jellybeans (cut in half) for the eyes. Use a pink jellybean cut in half for the nose. Use 2 mini marshmallows for the cheeks, and use either candy grass or licorice string for the whiskers. You could also use cookie frosting and piping gel to add additional features to your bunnies.

Rice Krispy NestsThese cute little bird nests are a fun treat to make with kids on Easter. They are easy to make and are delicious!

Ingredients:

  • 6 cups Rice Krispies
  • 4 cups mini marshmallows
  • 3 Tbsp. butter
  • cookie icing
  • candy grass or dyed coconut (green)
  • jellybeans or any egg shaped candies

Directions:

First prepare the Rice Krispies as follows:

Using a large pan, heat butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add Rice Krispies a cup at a time and stir until well coated.

Making the nests:

Take a golf ball sized piece of rice krispies and form into a round pancake shape. Gently work it into a cupped shape to form the nest. It should look like a tiny bowl. Put a small amount of cookie icing in the center and then fill with candy grass or coconut. Add candies to the nest for the eggs.

Rice Krispies Easter EggsRice Krispies treats are so yummy. These Easter eggs are so easy to make and kids will enjoy cracking them open to find a sweet surprise inside.

Ingredients:

  • 6 cups Rice Krispies
  • 4 cups mini marshmallows
  • 3 Tbsp. butter
  • 12 plastic Easter eggs
  • M and Ms
  • jellybeans
Optional:
  • frosting
  • sprinkles
  • piping gel

Directions:

First prepare the Rice Krispies as follows:

Using a large pan, heat butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. Add Rice Krispies a cup at a time and stir until well coated.

Wash the plastic eggs thoroughly and dry. Spray the insides of the eggs with a little bit of non-stick spray. It is also helpful to lightly coat your hands so that the marshmallow doesn't stick to them.

Take a small handful of the rice krispies and push it into one half of the plastic egg, working it up the sides and creating a cavity in it. Do the same to the other half of the egg. Repeat with remaining eggs.

Allow them to dry for a few minutes so that they hold their shape once removed from the eggs. Gently slide the rice krispy eggs out of the plastic eggs and put a few pieces of candy inside the cavity. Now carefully press the egg halves together using a little bit of pressure to seal the egg shut.

Now decorate using frosting, sprinkles, or piping gel.

Tip: Rice Krispy Treat Easter Baskets

For many years I have been making Easter baskets for my children and, now grandchildren from Rice Krispy Treats. I use a few more marshmallows than usual and tint them green. I then turn whatever size bowl I want to use upside down. This will be the size of the basket. I cover it with foil, then spray with non-stick spray. Cover with a fairly thick layer of Rice Krispies and mold over bowl. This needs to be firmly packed Then make a strip on a cookie sheet for the handle. Let cool until set. Unmold.

You can keep foil inside to keep the basket clean from whatever you put in it. Put the handle on with a melted marshmallow. I fill it, then place it in cellophane, just like a straw basket, and tie a large bow at the top They always eat it first, just love it and I don't have a bunch of old baskets laying around. Have also made mini's for each child for party favors using small bowls. They love it!
