Baked Tuna and Cheese Sandwich

Ingredients

  • 1 can tuna
  • 1 tsp. grated onion
  • 2 Tbsp. pickle relish
  • 1/2 cup finely minced celery
  • 2 T. mayonnaise
  • 4 slices bread, toasted on one side
  • 4 slices cheese
  • Paprika

Directions

Drain tuna and flake into a bowl. Add the onion, pickle relish, celery, and mayonnaise. Blend together. Divide the mixture on the toasted side of the bread and place on a buttered baking sheet. Cover each with a slice of cheese and sprinkle with paprika. Bake in a hot oven, 450 degree F, until cheese melts. This will take about 8-10 minutes. Serve hot.

I do this too, but I just toast the bread in the toaster, seems easier than trying to toast just one side. I like it crunchy so it's fine to toast, let cool while putting the tuna salad together, then assemble and heat. Also, it's good with a chopped hard cooked egg in it.

I've never put paprika on it, I'll try that next time. I especially like this with whole wheat bread.
