Circuit Rider Stew


  • 2 cans red kidney beans, drained
  • 1 large hog jowl or uncut bacon
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/2 cup corn meal
  • Ad
  • 1 small onion


In large black skillet, cut up the hog jowl or bacon into tiny pieces, no longer than a quarter. Cook until almost crisp, then add the onion also cut into small pieces. Add kidney beans. (Do not remove the grease from skillet, but pour out the juice from the cans of beans.) Allow to simmer for 45 minutes over low heat.
