  • 20 mushrooms
  • 3 Tbsp. butter
  • 2 Tbsp.finely chopped onions
  • 2 Tbsp. finely chopped red peppers
  • 14 Ritz type crackers, finely crushed (about 1/2 cup)
  • 2 Tbsp. grated fresh Parmesan cheese
  • 1/2 tsp. Italian seasoning

Stir in cracker crumbs, cheese and Italian seasoning. Spoon crumb mixture evenly into mushroom caps. Place on baking sheet. Bake 15 minutes or until heated through.

Note: Can use reduced fat crackers and reduced fat Parmesan style cheese grated topping.

To Make Ahead: Mushrooms can be stuffed several hours in advance. Cover and refrigerate until ready to serve. Uncover and bake at 400 F. for 20 minutes, or until heated through.

Making it easy: When preparing mushroom for stuffing, use a melon baller to carefully scoop a little mushroom flesh from the cap after removing the stem. Then use the melon baller to easily scoop the filling mixture into the mushroom.

Recipe: Cream Cheese and Maple Sausage EASY Stuffed Mushrooms

Here's an excellent recipe for stuffed mushrooms I accidently found:

Ingredients

  • Approximately 2 dozen decent sized mushrooms.
  • One Brick of softened Cream Cheese.
  • One brand name Jimmy Dean Maple Flavor Fresh Roll Sausage.
  • Salt and Pepper for seasoning.

Ingredients

Clean mushrooms and pat dry. Hollow out mushrooms with a spoon and discard stem and mushroom scrapings. Ground the sausage in a fry pan. Add brick of cream cheese to fry pan with sausage and mix together. Season mixture with desired amount of salt and pepper. Stuff the mushrooms.

Bake 350 degrees F for about 20 minutes. Cook time varies depending on size of mushrooms and your range.

(Archived Jul 29, 2009)Cheese Stuffed Mushrooms

Recipe: Cheese Stuffed Mushrooms

This great recipe disappeared so fast I didn't even get a good photo! It's called cheese stuffed mushrooms. Clean the amount of mushrooms you need (I ALWAYS make more) and pop/scoop out the middle. Fill the center with shredded cheese of your choice and top with a quarter piece of pepperoni. Place on a cookie sheet and place in a preheated 450 degree F oven for approximately 20 minutes or until mushrooms begin to "weep" and cheese is melted.
