Recipe: Savory Stuffed Mushrooms

Ingredients
- 16 fresh, large size mushrooms
- 1/2 cup butter
- 3 Tbsp. green pepper, finely chopped
- 3 Tbsp. onion, finely chopped
- 1 1/2 cups fresh whole wheat bread cubes
- 1/2 tsp. salt
- 1/8 tsp. pepper
Directions
Preheat oven to 350 degrees F. Wipe mushrooms with a damp cloth. Remove stems and chop stems fine. Heat 3 Tbsp. butter in large skillet. Saute' mushroom caps, only on bottom side, 2-3 minutes. Remove. Arrange, rounded side down, in a shallow baking pan. Heat rest of butter in same skillet. Saute' chopped mushroom stems, green pepper, and onion until tender, about 4 minutes. Remove from heat. Stir in bread cubes and seasonings. Use to fill mushroom caps, mounding mixture high in center.

Recipe: Bacon-Cream Cheese Stuffed Mushrooms

Ingredients:
- 16 oz. fresh mushroom (cleaned and stems removed)
- 1 (8 oz.) pkg. cream cheese
- 12 oz. crumbled bacon
- Garlic powder to taste
- 2 tsp. lemon juice
Directions:
Combine cheese, bacon, garlic powder, and lemon juice. Spoon in to mushroom caps. Place mushrooms on baking sheet and broil until filling is lightly brown.

Recipe: Low Carb Stuffed Mushrooms

Ingredients
- 1 container of Brie cheese spread
- mushroom caps
- 2 strips cooked, chopped, crispy bacon
- 2 Tbsp. of bread crumbs
- 1 tsp. chopped parsley
Directions
Put Brie cheese spread into small bowl. Add bacon, bread crumbs and parsley and mix. Remove stems from mushrooms and wipe caps. Spoon cheese mixture into caps. Bake in pre-heated oven. 350 degrees F, for about 10 minutes. Let stand for five minutes and serve.

Recipe: Veggie Stuffed Mushrooms

Ingredients
- 36 medium mushrooms
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 2 Tbsp. margarine
- 1 1/2 cup soft bread crumbs
- 1/2 tsp. salt
- 1/2 tsp. dried thyme leaves
- 1/4 tsp. ground turmeric
- 1/4 tsp. pepper
Directions
Remove stems from mushrooms; reserve caps. Finely chop enough stems to measure 1/3 cup. Cook and stir chopped mushroom stems, onion and bell pepper in margarine until tender, about 5 minutes; remove from heat. Stir in remaining ingredients. Heat oven to 350 degrees F. Fill reserved mushroom caps with stuffing mixture; place mushrooms, filled sides up, in baking or broiler pan sprayed with nonstick cooking spray. Bake, uncovered 15 minutes. Set oven control to broil. Broil with tops 3-4 inches from heat until light brown, about 2 minutes. Serve hot.

Recipe: Ultimate Stuffed Mushrooms

Ingredients
- 20 mushrooms
- 3 Tbsp. butter
- 2 Tbsp.finely chopped onions
- 2 Tbsp. finely chopped red peppers
- 14 Ritz type crackers, finely crushed (about 1/2 cup)
- 2 Tbsp. grated fresh Parmesan cheese
- 1/2 tsp. Italian seasoning
Directions
Preheat oven to 400 degrees F. Remove stems from mushrooms. Finely chop enough of the stems to measure 1/4 cup; set aside. Cover and refrigerate remaining stems for other use. Melt butter in large skillet on medium heat. Add 1/4 cup chopped mushroom stems, the onions and peppers; cook and stir until vegetables are tender. Stir in cracker crumbs, cheese and Italian seasoning. Spoon crumb mixture evenly into mushroom caps. Place on baking sheet. Bake 15 minutes or until heated through.
Note: Can use reduced fat crackers and reduced fat Parmesan style cheese grated topping.
To Make Ahead: Mushrooms can be stuffed several hours in advance. Cover and refrigerate until ready to serve. Uncover and bake at 400 F. for 20 minutes, or until heated through.
Making it easy: When preparing mushroom for stuffing, use a melon baller to carefully scoop a little mushroom flesh from the cap after removing the stem. Then use the melon baller to easily scoop the filling mixture into the mushroom.

Here's an excellent recipe for stuffed mushrooms I accidently found:
Ingredients
- Approximately 2 dozen decent sized mushrooms.
- One Brick of softened Cream Cheese.
- One brand name Jimmy Dean Maple Flavor Fresh Roll Sausage.
- Salt and Pepper for seasoning.
Ingredients
Clean mushrooms and pat dry.
Hollow out mushrooms with a spoon and discard stem and mushroom scrapings. Ground the sausage in a fry pan. Add brick of cream cheese to fry pan with sausage and mix together. Season mixture with desired amount of salt and pepper. Stuff the mushrooms.
Bake 350 degrees F for about 20 minutes. Cook time varies depending on size of mushrooms and your range.

This great recipe disappeared so fast I didn't even get a good photo! It's called cheese stuffed mushrooms. Clean the amount of mushrooms you need (I ALWAYS make more) and pop/scoop out the middle. Fill the center with shredded cheese of your choice and top with a quarter piece of pepperoni. Place on a cookie sheet and place in a preheated 450 degree F oven for approximately 20 minutes or until mushrooms begin to "weep" and cheese is melted.

Recipe: Parmesan Stuffed Mushrooms

Ingredients
- 1 pkg. instant stuffing mix (any flavor)
- 3 Tbsp. grated Parmesan cheese
- 26 large mushrooms
- 3 Tbsp. butter or margarine
- 1/4 cup red pepper, finely chopped
- 1/4 cup green onions, finely chopped
Directions
Prepare stuffing mix according to package directions, omitting margarine and adding 1 1/2 tablespoons Parmesan cheese. Clean mushrooms and remove stems. Saute' mushroom caps in 2 tablespoons margarine until brown, then place in baking dish. Cook chopped stems, red pepper, and green onions in remaining margarine until tender. Add vegetable mixture to stuffing mix, then spoon into mushroom caps. Sprinkle mushrooms with 1 1/2 tablespoons Parmesan cheese and broil in preheated oven for 3-5 minutes.

Recipe: Bacon Stuffed Mushrooms

Ingredients
- 1 pound medium size fresh mushrooms
- 4 bacon slices, diced
- 1/2 cup minced onion, or use part green onion
- 2 tsp. minced fresh green pepper
- 1 tsp. salt
- 1/8 tsp. pepper
- 3 ounces cream cheese, room temperature
- 1/2 cup fine dry bread crumbs, plain
- 1/4 cup hot water
Directions
Clean mushrooms, remove and chop stems; set aside. Fry bacon in a heavy skillet. Remove with a slotted spoon and set on paper towels to drain. In bacon drippings, saute onion, green pepper, and chopped mushroom stems until tender; drain. Soften cream cheese; blend in cooked bacon and vegetables. Press mixture firmly into mushroom caps, mounding a bit. Place bread crumbs in a small bowl. Turn filled mushroom caps upside down and press gently in the bread crumbs to coat tops. Place in a 9x13x2-inch baking dish. Add hot water to pan and bake, uncovered, 20 to 25 minutes at 325 degrees F.
Makes about 2-1/2 dozen stuffed mushrooms

These vegetarian appetizers are as delicious as they are easy. Highly flavorful, your can guarantee your guests will go back for seconds and thirds.
List of Ingredients:
- 2 tablespoons of olive oil
- 1 10 oz package of mushrooms
- 1 small onion finely diced
- 1/4 teaspoon of garlic salt
- 1/4 teaspoon of pepper
- 1/2 cup of flavored breadcrumbs
- 1/2 cup of shredded mozzarella
- Olive oil cooking spray
Directions
- Preheat oven to 350 degrees
- Spray cookie sheet with cooking spray.
- Clean mushrooms. Remove and save stems.
- Finely chop stems.
- In a saucepan, sauté the onions and stems in olive oil until soft.
- Add garlic salt and pepper.
- Mix in breadcrumbs.
- Mix in cheese.
- Use a teaspoon to fill mushroom caps with stuffing.
- Place stuffed mushrooms on cookie sheet and spray lightly with cooking spray.
- Bake for 30 minutes or until brown on top.
Freeze in a single layer in a thin, covered container.
Directions for preparing frozen mushrooms:
Cooked mushrooms can be frozen and heated in a 350-degree oven for about 15 minutes.

Ingredients
- 8 oz. fresh mushrooms, stems removed
- 2 (8 oz. ea.) pkgs. cream cheese, softened
- 2 green onions, chopped
- 1/4 lb. imitation crabmeat
- 1/4 lb. small shrimp, peeled and deveined
- 2 (1 oz. ea.) pkgs. green onion dip mix
- 1 dash garlic powder
- salt and pepper to taste
Directions
In a medium bowl, combine the cream cheese, green onions, crab, shrimp, dip mix, garlic powder, salt and pepper. Mix all together and chill mixture for about 1 hour. Spoon mixture into clean dried mushroom caps to stuff and serve.

Preheat oven to 400 degrees F. Remove stems from mushroom caps; set aside. Place caps, stem-side up, on baking sheet. Chop enough mushroom stems to measure 1/2 cup. In medium bowl, combine chopped stems, ham, bread crumbs, bell pepper, garlic and dressing; mix well. Spoon filling into mushroom caps, gently pressing filling into caps. Bake 18-20 minutes or until mushrooms are tender and filling is golden brown. Yield: 24-30 mushrooms.

- 1/2 lb. seasoned sausage
- 1/4 cup chopped onion
- 1/4 cup green pepper
- 1 cup shredded Cheddar cheese
- 2 lb. fresh mushrooms
Directions
Brown sausage and drain. Add onion and green pepper and 1/2 of shredded cheese. Wash mushrooms and take out stems. Stuff with meat mixture. Sprinkle with rest of cheese. Bake at 350 degrees F for 20-25 minutes.

To make stuffed mushrooms slice off the stem of a whole, clean, mushroom. With a small teaspoon (1/8 or 1/4 teaspoon), or small melon baller, scoop out the inside of the mushroom. Fill with a favorite dip or fill with bread crumbs and blue cheese and melt under the broiler for a few minutes.

After taking off the stem and scooping out the inside, chop it all up and saute in a pan with butter,minced onion & garlic... then add more melted butter and then stir in italian flavored bread crumbs and bake in the toaster oven till browned on top. You can substitute olive oil for the butter and also add in some crab meat for an extra treat. (03/31/2007)

Request: Pre-Cooking Spinach Souffle Stuffed Mushrooms

I want to pre-cook spinach souffle stuffed mushrooms for Thanksgiving. Will the mushrooms hold up and not be mushy if I parboil them, fill them with souffle and freeze them? Then heat them in the oven when it is time to serve them? Please help.

I'm no expert, but when my mother makes stuffed mushrooms, she doesn't cook or blanch the mushrooms first.
She fills them and bakes them. Mushrooms 'make water' though, meaning that when you cook them, they release their water content.
I would freeze them, then cook them.
Or you can try making a couple ahead of time and see how they turn out. Make a few with cooked, filled mushrooms and a few with uncooked filled mushrooms.
Or ask something like a Betty Crocker or Better Homes and Gardens website.
Good Luck! Recipe sounds delicious and I hope you will post it.

Clean about a dozen button mushrooms. Remove and chop the stems. In a small bowl mix chopped stems with 2 tablespoons flavored cream cheese. I like vegetable or chive. Add some dried parsley, dried onion, Spike, seasoned salt, etc. Stuff the caps with this mixture. Top each with bread or cracker crumbs. Bake on a greased cookie sheet for 7 minutes of until cheese is hot and tops are browned. (01/18/2006)

If you've ever been to Houlihan's, their stuffed 'shrooms are excellent! I got this from aaa-recipes.com:
Houlihan's 'Shrooms
Cheese Filling
1/3 cup whipped cream cheese
1/4 cup shredded sharp Cheddar cheese
1/2 teaspoon dry Hidden Valley Ranch Dressing Mix
Combine cream cheese, Cheddar cheese and dressing mix. Let stand for 10 to 15 minutes.
6 large button mushrooms
1 cup bleached flour
1 1/2 teaspoons salt
1/2 teaspoon cayenne pepper
1/2 cup buttermilk
Vegetable oil for frying
Clean mushrooms and remove stems. When cheese has rested, use a teaspoon to fill mushroom caps.
Combine flour, 1 1/2 teaspoons salt and cayenne pepper in a small bowl.
Pour milk into another small bowl. Dip mushroom first in milk and then in flour. Do this twice. Put coated mushroom into the freezer for at least 3 hours. When mushrooms are frozen, heat oil in a deep fryer to 350 degrees F. Use enough oil to cover mushrooms completely. Fry for 8 to 10 minutes until golden. Drain. Let sit for a couple of minutes before serving.

Aahhh, use chopped stems from the 'shrooms mixed with finely chopped shallots, bacon bits and cheese of your choice. I use finely grated extra sharp cheddar. I also use a little hot sauce to spice things up a bit. Oh, and butter... gotta have butter. The bacon and shallots make the dish, everything else is optional. Then just broil them until nicely browned and pig out. I can't imagine making less than forty or so because they tend to evaporate. You'll know when you get them right because your tongue will leap from your face and slap your brains out. Trust me here, that's a small price to pay. (01/22/2006)

I always get raves from this recipe:
Chopped shrimp and or crab, cream cheese, garlic, green onion. Mix together and fill mushroom caps. You can use the stems chopped up, too. Top with shredded monterey jack or whatever cheese you like. Bake at 350 till bubbly.
