Unstuffed Cabbage Soup

Ingredients:

  • 1 lb. beef
  • 6 cups beef broth
  • 4 cups low sodium V8 vegetable juice
  • 2 (14.5 oz) cans of no salt added stewed tomatoes
  • 2 cups chopped onion
  • 1 (1 lb.) bag coleslaw mix or 10 cup fresh green cabbage (shredded)
  • 2 cups instant brown rice

Directions:

In a large nonstick, soup pot, bring everything, except rice, to a full boil over high heat. Let boil for 6 minutes, stirring occasionally. Turn off heat and stir in rice. Cover and let sit for 5 minutes. Serve hot.

Makes: 16-1 cup servings
