Ingredients

  • 1 pkg. ramen
  • 3 eggs, beaten
  • 3 or 4 green onions, chopped

Directions

Cook the ramen only 2 1/2 minutes (not three), with seasoning packet. Then in a in a frying pan, cook eggs, slightly over medium, (you want just a little runny. Chop the eggs into 1/2 strips. Add green onions, and put on low heat.

When ramen is done, drain half of the ramen liquid. Add ramen and remaining liquid to frying pan with eggs and onion. Toss with a set of tongs. Shut off heat after 30 - 45 seconds. You have to be quick. Enjoy.

I used to go out with a man from Japan and the way he fixed ramen was similar. Except, when the ramen was boiling, he would drop in one or two raw eggs and the onion tops and then shut off the stove and let the eggs come out like soft boiled eggs. This way is easier, just add a little soy sauce.
