Cocoa Crown Cake

Ingredients:
  • 3 egg whites
  • 3/4 cup sugar
  • 1/3 cup light corn syrup
  • 1/8 tsp. cream of tartar
  • Dash of salt
  • 3 layers Basic Light Cake
  • About 1 Tbsp. cocoa
  • About 1 Tbsp. powdered sugar

Directions:

Combine first 5 ingredients in top of a double boiler. Beat at low speed of mixer 30 seconds or just until blended. Place mixture over boiling water; beat constantly at hight speed 7 minutes or until stiff peaks form. Remove from heat. Arrange strips of wax paper around edges of a cake plate. Stack layers on top of wax paper, spreading frosting between layers. Spread frosting into swirls on sides of cake and smoothly on top of cake. Lightly, but thoroughly, sift cocoa over top of cake. Carefully place a paper doily over cake, and sift powdered sugar over cocoa. Gently remove doily and wax paper strips.
