Easy Banana Bread


  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 1/2 cups mashed ripe banana
  • 1/2 tsp. vanilla
  • 2 1/3 cups buttermilk baking mix
  • 1 cup sugar
  • Ad
  • 1/2 cup chopped walnuts
  • 1/4 cup semi-sweet chocolate chips (opt.)


Preheat oven to 350 degrees F. In large bowl, whisk eggs and oil. Stir in banana and vanilla. Add baking mix, sugar and walnuts; mix well. Stir in chocolate chips, if desired. Pour batter into greased 9x5 inch loaf pan.

Bake 55-60 minutes or until golden brown and wooden pick inserted in center comes out clean. Cool in pan 5-10 minutes. If necessary, slip knife down sides of pan to loosen bread from pan. Remove bread from pan; cool completely on wire rack.
