Breakfast Quesadilla Omelet
I love to have this one with a wee bit of cantaloupe on the side :-)
- 1/2 cup bell peppers, diced
- 2 Tbsp. onion, diced
- 2 large eggs, lightly beaten
- 1/ 2 cup ham, diced
- 2 flour tortillas (10 inches)
- 1/2 cup cooked tomatoes, diced
- 1/4 cup mozzarella cheese, shredded
- 1/4 cup cheddar cheese, shredded
- 3 Tbsp. salsa
Cook bell peppers and onion in a skillet over medium heat until tender. Add eggs and ham and cook, while lightly stirring, until eggs are set.
Place one tortilla in another skillet over medium heat and top with egg mixture, tomatoes, cheeses and remaining tortilla. Cook, turning once, until lightly browned on both sides and cheese is melted. Cut in half, garnish with salsa and serve.
