Chocolate Coke Cake
Ingredients
- 2 cups sugar
- 2 cups flour
- 1/2 cup butter
- 1/2 cup shortening
- 3 Tbsp. cocoa
- 1 cup Coke
- 1/2 cup buttermilk
- 1 tsp. soda
- 2 eggs, beaten
- 1 tsp. vanilla
- 2 cups mini marshmallows
Icing
- 1/2 cup butter
- 6 Tbsp. Coke
- 3 Tbsp. cocoa
- 1 package powdered sugar (1lb.)
- 1 tsp. vanilla
- 1 cup pecans
Directions
Mix by hand! Sift sugar and flour in a large bowl. Combine butter, shortening, cocoa and Coke. Heat until butter is melted, then pour over flour mixture and stir. Add buttermilk, soda, eggs, vanilla and marshmallows. Mix and put in a greased 9x13 pan. Bake at 350 degrees F for 35-45 minutes.
For Frosting: Combine butter, Coke and cocoa and bring to a boil. Stir in remaining ingredients and pour over hot cake.

hi robin. tried out your recipe and it turned out WAY too sweet.im no recipe maker, just tend to follow the recipes as is, but you really need to modify the sugar somewhere along the line. my kids have a VERY sweet tooth and they cudnt eat it! and i left the marshmallows out coz i didnt have any, which wud have made it even sweeter! shame coz it looked so nice.
