Hoppin "Fast Easter Mornin" Cinnamon Roll

  • 20 unbaked frozen dinner rolls
  • 1 cup brown sugar
  • 1/4 cup instant vanilla pudding mix
  • 2 teaspoons ground cinnamon
  • 3/4 to 1 cup raisins
  • 1/4 cup pecans (optional)
  • 1/3 cup butter, melted

Lightly grease a 10 inch Bundt cake pan with butter. Place frozen rolls into pan and sprinkle with brown sugar, pudding mix, ground cinnamon, raisins, and pecans. Pour melted butter over rolls. Cover with a clean, damp cloth and leave overnight at room temperature. In the morning, preheat oven to 350 degrees. Bake rolls for 25 minutes, or until golden brown; while baking, mix-up the Cream Cheese Frosting. Turn rolls out onto a serving plate. While still warm, spread rolls with the frosting.

Cream Cheese Frosting

  • 1/2 (8 ounce) package cream cheese
  • 2 tablespoons milk
  • 1/2 tsp. vanilla extract
  • 1 cup confectioners' sugar

Blend together the cream cheese, milk, and vanilla extract until light and fluffy. Gradually add the confectioners sugar to cream cheese mixture, mixing constantly. Spread over Cinnamon Rolls. EAT!
