Using Truffles

Truffles are a Diamond in the Kitchen and very difficult to find due to lack of prolonged drought. I've managed to find them at several food markets in K.C. Missouri, so you'll have to search in your cities if they are wanted.

Tips for using truffles:

  1. Do not pair truffles with strong, competing flavors.
  2. Cut truffles with a fine grater or use a paring knife to shave fine slices. Shaving truffles over a dish allows their rich creamy taste to permeate the dish.
  3. When using truffles oils, use 1 drop. A little goes a long way.

Sounds yummy but aren't truffles very expensive? How much are you having to pay for them and do you think truffle oil could be substituted in this recipe?
