Basic Mix Coffee Cake

Ingredients

• 4 1/2 cups sifted flour
• 2 Tbsp. baking powder
• 1 1/2 tsp. salt
• 1 cup shortening
• 1/4 cup sugar
• 1 egg, well beaten
• 2/3 cup milk
• 1/4 cup melted butter
• 1/2 cup packed brown sugar
• 1 cup Special K
• 1/2 tsp. cinnamon

Directions

Sift first 3 ingredients into large bowl. Cut in shortening until crumbly. Measure 2 cups of mixture for this recipe, reserving remainder for future use by storing in covered container. Combine with sugar, mixing well. Beat egg with milk in small bowl. Add to flour mixture, stirring until just mixed. Spread in 8x8 greased pan. Combine remaining ingredients in small bowl, mixing well. Sprinkle with batter. Bake at 400 degrees F for 25 minutes.
