Cottage Cheese Balls

Ingredients

  • 1 pint cottage cheese
  • 1 tsp. unflavored gelatin
  • 4 Tbsp. cold water
  • 1/4 cup chopped ripe olives
  • 1/4 cup chopped pecan meats
  • 1/8 tsp. salt

Directions

Combine water and gelatin and soften in the double boiler. Add the cottage cheese, which should be quite dry. When cool combine with other ingredients. Roll in balls on inch in diameter and set aside while you peel and grate a carrot. The final step is to roll the cheese balls in the grated carrot until nicely coated. These are pretty to look at and they taste very good!
