Olive Mushroom Meatloaf

Ingredients

  • 2 Tbsp. butter
  • 1 cup minced onion
  • 1/2 lb. mushrooms, diced
  • 1/2 tsp. salt
  • 2 lbs. ground beef
  • 1 cup sliced stuffed olives
  • 2 cups soft bread crumbs
  • 2 eggs
  • 2 tsp. salt
  • 1/4 tsp. pepper

Directions

Heat oven to 375 degrees F. Melt butter in skillet over medium heat. Add onion. Cook 2 minutes, stirring frequently. Add mushrooms and 1/2 tsp. salt. Cook 1 minute. Combine mushroom-onion mixture, beef, olives, bread crumbs, eggs, salt and pepper in large bowl. Mix gently. Press mixture in loaf pan. Bake 1 1/4 hours. Makes 6-8 servings.
