Potato Ranch Casserole

Ingredients

  • 2-3 lb. hamburger
  • 1 med. onion, chopped
  • 2 cans cream of mushroom soup
  • 8 cooked and shredded potatoes
  • 16 oz. sour cream
  • 2 cups Ranch dressing
  • 16 oz. mozzarella cheese or marbled cheese
  • 1 lb. bacon, fried and crumbled

Directions

Brown hamburger and onions. Add a dash of salt and pepper. Drain. Mix soups and hamburger and place in a large roaster. Place potatoes on top of hamburger. Mix sour cream and Ranch dressing. Spread evenly over potatoes. Bake at 325 degrees F for 45 minutes or until heated through. Sprinkle cheese and bacon on top. Bake until cheese melts. Pepperoni may be place on top instead of bacon.

What do you mean by cooked and shredded potatoes, boiled then rub against the cheese grater? Or grate them then fry?

Ranch Potato Casserole

Very good casserole! Love the Ranch taste.

Ingredients:

  • 6-8 medium red potatoes
  • 1/2 cup sour cream
  • 1/2 cup Ranch dressing
  • 1/4 cup bacon bits or cooked crumbled bacon
  • 2 Tbsp. minced fresh parsley
  • 1 cup shredded cheddar cheese
    • Topping:
      • 1/2 cup shredded cheddar cheese
      • 2 cup slightly-crushed corn flakes
      • 1/4 cup melted butter

      Directions:

      Cook potatoes until tender. Quarter (leaving skins on, if desired) and set aside. Combine sour cream, dressing, bacon, parsley and 1 cup of cheese.

      Place potatoes in greased 9x13 inch baking dish. Place sour cream mixture over potatoes and gently toss. Top with 1/2 cup cheese. Combine corn flakes with butter, and sprinkle over casserole. Bake at 350 degrees F for 40-45 minutes.

      Prep Time: 20 Minutes
      Cooking Time: 40-45 Minutes
