Ingredients
- 2 lbs. cubed beef, raw
- 2 cups diced potatoes
- 1 cup diced carrots
- green pepper, as desired
- salt and pepper, to taste
- 1 cup tomato juice
- 2 Tbsp. tapioca
- 1/2 cup diced onion, if desired
Directions
Mix tomato juice with tapioca. Combine with other ingredients in a casserole with a tight fitting lid. Bake for 3 hours, covered, at 275 degrees F. Mix omit potatoes and serve over rice, if you like.
