Easy Oven Stew

Ingredients

  • 2 lbs. cubed beef, raw
  • 2 cups diced potatoes
  • 1 cup diced carrots
  • green pepper, as desired
  • salt and pepper, to taste
  • 1 cup tomato juice
  • 2 Tbsp. tapioca
  • 1/2 cup diced onion, if desired

Directions

Mix tomato juice with tapioca. Combine with other ingredients in a casserole with a tight fitting lid. Bake for 3 hours, covered, at 275 degrees F. Mix omit potatoes and serve over rice, if you like.
