Break up noodles and cook in 3 cups boiling water for 2 minutes. Rinse with cold water and drain. Combine seasonings from 1 flavor packet with the Monterey Jack cheese, chilies, olives and pimientos. Add the sour cream and mix well. Add the cooked noodles; toss gently.
Lightly butter a casserole dish and spoon mixture into dish. Sprinkle evenly with Cheddar cheese and Parmesan cheese. Bake at 400 degrees F for 20 minutes or until bubbly. Garnish with chopped tomato, avocado and/or green onions, if desired.
