Ingredients
- 3 medium ears fresh corn, each cut into 3 pieces
- 1 lb. medium red potatoes, quartered
- 1 cup fresh baby carrots
- 1 large green bell pepper, cut in 1 inch pieces
- 1 large sweet red bell pepper, cut in 1 inch pieces
- 1 envelope onion soup mix
- 3 Tbsp. minced fresh basil or 1 Tbsp. dried basil
- 1 Tbsp. olive oil
- 1/4 tsp. black pepper
- 1 Tbsp. butter
Directions
In a large bowl, combine 1st 9 items. Toss to coat. Place on a double thickness of heavy duty aluminum foil (about 28x28-inches). Dot with butter. Fold foil around the veggie mixture and seal tightly. Grill, covered, over medium heat for 25-30 minutes or till potatoes are tender, turning once. Serves: 6
