Okra Curry

Ingredients:

  • 3 3/4 Tbsp. oil
  • 1 onion, peeled and chopped
  • 2 medium sized potatoes, peeled and cut into 1 inch pieces
  • 4 cups okra, topped, tailed, and chopped into 1/2 inch pieces
  • salt (to taste)
  • 3/4 tsp. ground turmeric
  • 1 1/4 tsp. chili powder
  • 1 3/4 tsp. ground coriander
  • 2-3 sprigs fresh green coriander leaves, chopped

Directions:

Heat the oil in a wok or solid based frying pan and fry the onion for 3-4 minutes. Stir in the cubed potatoes; cover and cook to 3-4 minutes. Add the okra, and stir fry for 2 minutes. Sprinkle with salt, turmeric, chili, and ground coriander. Mix gently; cover and cook for 8-10 minutes. Stir occasionally and continue cooking until potatoes are tender. Sprinkle with the chopped coriander leaves. Mix well and serve.
