Banana Cookies

Ingredients

  • 1/2 cup margarine
  • 1/4 cup sugar
  • 1 ripe banana
  • grated peel of lemon
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1/8 tsp. salt
  • 1 egg
  • 1 1/4 cups flour
  • powdered sugar

Directions

In large bowl, cream margarine and sugar; add vanilla and salt until fluffy. Add egg, banana, and lemon peel. Beat well until banana is mashed. Add baking powder to flour; gradually stir into creamed mixture. Drop by teaspoon 2 inches apart on lightly greased cookie sheet. Bake at 350 degrees F for 12-15 minutes or until lightly browned on edges. Cool and sprinkle with powdered sugar.

Recipe: Banana Cookies

Ingredients

  • 3/4 cup shortening
  • 3/4 cup brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 medium size ripe bananas
  • 1/4 tsp. salt
  • 1 tsp. soda
  • 2 cups flour
  • nuts, if desired
Icing:
  • 6 Tbsp. brown sugar
  • 4 Tbsp. butter or margarine
  • 4 Tbsp. cream, milk or evaporated milk

Directions

Cream together shortening and sugar. Add egg, vanilla and mashed bananas, mixing well. Sift together flour, soda and salt; add to creamed mixture. Drop by teaspoonfuls onto greased cookie sheet. Bake at 350 degrees F for 15-20 minutes. Cool and frost.

For Icing: Bring sugar, butter and milk to a boil. Remove from heat. Add sufficient powdered sugar to make of spreadable consistency.
