Rice, Pea And Almond Casserole
- 2 tsp. butter
- 1/2 cup chopped onions
- 1 tsp. crushed garlic
- 1/2 cup wild rice
- 1/2 cup white rice
- 3 1/4 cups vegetable broth
- 3/4 cup chopped snow peas
- 1/4 cup diced sweet pepper
- 1/4 cup slivered almonds
- 1 Tbsp. grated Parmesen cheese
In large pan, saute garlic and onions in butter until onions are clear. Add rices for about 2 minutes. Add broth, simmering for about 30 minutes until rice is tender. Add almonds, peas and peppers and toss. Once served into bowls, sprinkle with cheese.
