Turkey Rice Soup

This delicious soup is a perfect way to warm up on a chilly day. It is also a good way to use any leftover turkey after the holidays.

Ingredients:

  • 3/4 lb. turkey tenderloin, cut into bite size pieces
  • 1 1/2 qts. water
  • 2 stalks celery, sliced
  • 1 medium onion, chopped
  • 2 chicken flavored bouillon cubes
  • 1 tsp. salt
  • 1/4 tsp. poultry seasoning
  • 1 bay leaf
  • 1/2 cup uncooked long grain rice
  • 2 carrots, scraped and sliced

Directions:

Combine first 8 ingredients in a Dutch oven. Bring to a boil. Cover, reduce heat, and simmer 40 minutes. Add rice and carrots. Cover and simmer an additional 20 minutes or until rice is tender. Remove bay leaf.
