Preventing Cream from Curdling When Using in Cooking
What can I do to prevent cream curdling when using it to cook certain dishes?

If the cream is cold and you are adding it to hot/boiling food, it is likely to curdle.Try heating the cream so it is warm, or temper the cream by adding some hot liquid from the food to the cream a little at a time until the cream is warm. Then add to the food.
