I have one crockpot recipe to share with you. It's pork chalupas. This one is delicious.
Serve with tortillas, rice, and any of the following toppings:
* shredded lettuce
* shredded cheese
* sliced avocado
* sour cream
* hot sauce
and you have a complete meal.
Pork Chalupas
Ingredients:
* 3 to 4 lb. boneless pork butt, trimmed of fat.
* 1 lb. dry black beans, (two cups), rinsed and cleaned
* 1 four ounce can green chiles, use chopped or chop them.
* 5 cloves garlic, minced
* 1 can fire roasted diced tomatoes (14oz.)
* 1/2 cup diced yellow onion
* 2 tsp. salt
* 1 tbsp. chili powder
* 2 tsp. ground cumin
* 3 to 4 cups of low sodium chicken broth

Here are a few of our favorites. Either/or turkey drums or thighs, a little soy sauce, balsamic vinegar,garlic and oregano. Absolutely delicious. A whole chicken seasoned any way you like it, no liquid, it falls off the bone. The meat is actually more seasoned than from the oven. Our other favorite was PorkButt ribs in the crock all day, seasoned however you'd like, when I got home from the beach I would take them out, brush with BBQ sauce, put in the oven, take a shower, finished by the time I got out.
I would actually use it more in the summer when my kids were younger, we'd go to the beach all day, everyday and Daddy would still get a good home cooked meal after working all day. It is a great tool for the summer.
