Spanish Garlic Soup

  • 12 cloves garlic, peeled and chipped
  • 1 tsp. salt
  • 1 tsp. pepper
  • 5 cups water
  • 2 Tbsp. oil
  • 2 slices whole grain bread
  • Ad
  • grated Parmesan cheese, to taste

Combine garlic, seasonings, water and oil and bring to a boil. Cover and simmer for 30 minutes. Crumble bread into the soup and return to a boil. Serve with grated cheese. 4 servings.

There is a note written on this recipe that says that this soup is good to serve when fighting a cold or flue because garlic is nature's antibiotic. Not sure if this is true or not, but I have heard there are many health benefits to eating garlic.

Silly question, does the bread thicken the soup?

I would add some nicely flavored hot sauce which

contains a nice amount of capsicum for more of a

boost to ward off a cold or flu. Good stuff.

Thank you,
