Chicken
- 3 lb. frying chicken parts
- salt
- 1/4 cup vegetable oil
- 2 Tbsp. melted butter
Rinse and dry chicken. Salt to taste. Brown chicken in oil and butter combined. Arrange pieces in shallow pan. Spoon plum glaze over pieces. Bake at 375 degrees F for 45 minutes. Baste with glaze while baking.
Glaze
- 1 cup plum jam
- 1 Tbsp. ketchup
- 2 tsp. grated lime or lemon peel
- 1 Tbsp. lime or lemon juice
- 2 tsp. vinegar
- 1 tsp. grated or ground ginger
- 1/8 tsp. Tabasco sauce
- 1/4 tsp. dry mustard
- 1/4 tsp. ground cinnamon
- 1/8 tsp. ground cloves
Slowly heat jam in saucepan until it melts. Add remaining ingredients. Pour over chicken parts.
