RASPBERRY BARS
3C flour, 1 1/2 C sugar, 1/2t baking soda, 1/2 t grated lemon peel, 1 C margarine chilled, 1 egg slighted beaten
FILLING
1 pkg (12oz) raspberries
1 1/4 C sugar
1/4 C water
1 T cornstarch
1/2 t grated lemon peel
1/2 t vanilla
ICING
1 1/4C powered sugar
1 to 2 T lemon juice
1 T margarine softened
Heat oven to 350. In large mixing bowl, combine flour,11/2 C sugar, soda and 1/2 t peel. Cut in butter and egg until mixture resembles coarse crumbs. Reserve 2 Cups of mixture. Press remaining flour mixture into ungreased jelly roll pan (151/2 X 101/2). Bake for 8 minutes.

In 2 qt. saucepan, combine filling ingredients. Cook over medium-high heat until raspberries are defrosted and filling is thickened, stirring frequently. Spread filling over base. Sprinkle reserved flour mixture over filling. Bake and additional 15-20 minutes, or until golden brown. Cool slightly.
In small mixing bowl combine icing ingredients. Stir until smooth. Drizzle icing over warm bars. Cool completely before cutting.

I have used fresh berries also.
