I am looking for a recipe for Raspberry Crumb Bars.
Lucille from Bethlehem, PA
3C flour, 1 1/2 C sugar, 1/2t baking soda, 1/2 t grated lemon peel, 1 C margarine chilled, 1 egg slighted beaten
1 pkg (12oz) raspberries
1 1/4 C sugar
1/4 C water
1 T cornstarch
1/2 t grated lemon peel
1/2 t vanilla
1 1/4C powered sugar
1 to 2 T lemon juice
1 T margarine softened
Heat oven to 350. In large mixing bowl, combine flour,11/2 C sugar, soda and 1/2 t peel. Cut in butter and egg until mixture resembles coarse crumbs. Reserve 2 Cups of mixture. Press remaining flour mixture into ungreased jelly roll pan (151/2 X 101/2). Bake for 8 minutes.
In 2 qt. saucepan, combine filling ingredients. Cook over medium-high heat until raspberries are defrosted and filling is thickened, stirring frequently. Spread filling over base. Sprinkle reserved flour mixture over filling. Bake and additional 15-20 minutes, or until golden brown. Cool slightly.
In small mixing bowl combine icing ingredients. Stir until smooth. Drizzle icing over warm bars. Cool completely before cutting.
I have used fresh berries also.
I have sent a raspberry Crumb Bars recipe and it was posted on November 17, 2008 newsletter. You can also go on search and you will find it there. It has been posted on November 17, 2008. Very simple recipe. Thank you
