Spicy Cheese Tortilla Rollups

Ingredients:

  • 4 oz cream cheese, softened
  • 2 green onions, finely chopped
  • 3 Tbsp. ‘hot' salsa (not heated ;-)
  • 2 oz Cheddar cheese, shredded
  • 4 (10 inch) flour tortillas

Directions:

In a medium bowl, mix together the cream cheese, green onions, salsa and Cheddar cheese.

Spread the cream cheese mixture in even portions on the tortillas. Roll the tortillas and refrigerate in plastic wrap because they cut better once 'firmed up'. After an hour or two, slice into 1 inch long pieces and serve.

Spicy Cream Cheese Roll Ups

Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup manzanilla olives, drained and chopped
  • 4 green onions, finely diced
  • 2 tsp Tabasco sauce
  • 6 (10-inch) flour tortillas

Directions:

Mix cream cheese, olives, onions and Tabasco in a bowl.

Evenly spread mixture over each tortilla, roll up, trim off both unfilled ends, wrap in plastic wrap and chill at least two hours.

When ready to serve cut each roll into 1 to 2 inch pieces, if serving as an appetizer, or simply eat whole ;-)
