Fish Fillet Spanish Style

Ingredients

  • 2 lb. fish fillets
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 2 Tbsp. butter or margarine
  • 1 Tbsp. flour
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. sugar
  • 1/2 tsp. thyme
  • 1 Tbsp. minced parsley
  • 2 cups canned tomatoes

Directions

Pat fish fillets dry with paper towel. Place fish such as sole, cod, halibut, or haddock, in greased shallow baking dish. Saute' onion and celery in butter until tender. Add flour and stir well. Add all other ingredients and simmer about 5 minutes. Pour over fish and bake uncovered at 400 degrees F for 30 minutes.
